1- pound small red potatoes quartered

3 tablespoons extra virgin oil

salt and pepper to taste

2 tablespoons fresh chives

1-teaspoon dill

2  teaspoons fresh  lemon juice

1  teaspoon grated lemon peel



Preheat oven to 350 degrees and place potatoes on an ovenproof tray and drizzle with olive oil.  Sprinkle with salt and pepper and toss to coat.  Roast potatoes until golden brown and fork tender.  Sprinkle with lemon juice, lemon peel, chives and dill, toss to combine and roast 1 minute longer.

Serve immediately
