SAUTED SHRIMP WITH OLIVE OIL-MUSTARD VINAIGRETTE


serves four
 

ingredients

5 tbs olive oil      

2 tsp Dijon mustard

1 clove garlic minced

1 tsp lemon juice

tsp dill

Pinch of salt

1-pound shrimp with shell

 

directions

Combine the above ingredients except the shrimp in a small bowl and whisk until mayonnaise-like thickness.

Shell the shrimp, place in a bowl and pour the olive oil mustard combination making sure all of the shrimp are covered with the marinade.  Cover the bowl with plastic wrap and place in the refrigerator for about an hour.

 

Place remaingolive oil in an aluminum skillet over medium heat.  Add the  shrimp and place over medium high heat until the shrimp turn pick (about 2 minute.  Turn the shrimp over and cook for another minute.  Remove from the heat and plate on a bed of rice and serve. *
