5 tbs olive oil
2 tsp Dijon mustard
1 clove garlic minced
1 tsp lemon juice
½ tsp dill
Pinch of salt
1-pound shrimp with shell
Combine the above ingredients except the shrimp in a small bowl and whisk until mayonnaise-like thickness.
Shell the shrimp, place in a bowl and pour the olive oil mustard combination making sure all of the shrimp are covered with the marinade. Cover the bowl with plastic wrap and place in the refrigerator for about an hour.
Place shrimp on skewer and cook on grill over medium heat turning once
(about 2 minutes). Turn the shrimp over and cook for another minute. Remove from grill and plate on a bed of rice and serve. *
