GRILLED SWORDFISH STEAKS Marcella Hazan Essentials of Classic Italian Cooking

serves 4-6



2 tbs lemon juice

2 tsp fresh oregano or 1 tsp dried

1 tbs salt

14 tsp pepper

cup olive oil

2 lbs swordfish steaks inch thick



Pre-heat grill on high

Place lemon juice and salt in a small bowl and whisk until the salt dissolves.  Add the oregano and then whisk in the olive oil drop by drop until the mixture thickens slightly and is well blended.  Add the pepper and set aside.

Place the steaks over the high heat and grill for about 2 minutes per side.

Prick the fish with a fork in several place and spoon the olive oil mixture evenly over it.


Serve immediately
