1 lb. dried peeled fava beans

Soaked overnight in water

3 tbsp. olive oil

1 small onion diced

J garlic clove minced

3 ounces prosciutto diced



Drain the beans, put them in a large pot, and add water to cover by 2 inches.  Bring to a boil, then lower heat and simmer for 1/1/2 hours or until tender.  Drain, reserving 1 cup of the liquid.

Heat the in a large skillet over medium heat, add the onion and garlic and sauté until softened.  Add the ham and cook for 2 minutes until it begins to brown.  Add the beans and the cooking liquid and cook for 10 minutes or until the beans have absorb most of the liquid.
