18 Mushrooms (about 1to ½ lbs)
1 tbs olive oil
1 medium onion chopped
½ cup panko
2 tbs parsley
¼ tsp oregano
6 ounces chorizo casing removed and crumbled
2 tbs raisins
Salt and pepper to taste
1-cup chicken stock

Preheat broiler
Remove the stems from the mushrooms and chop them. Heat the oil in a skillet, add the onions and sauté over low heat until softened. Add the mushroom stems and cook until dry, about 5 minutes. Transfer to a bowl and mix with the panko, chorizo, herbs, and raisins.
Stuff mushroom, arrange on a baking sheet and broil for 4 to 5 minutes until the tops are golden. Transfer them to a skillet, add stock and bring to a boil. Lower heat, cover and cook 20 minutes.
Remove mushrooms, bring stock to a boil and cook until reduce by half.
Pour over mushrooms and serve.
