ingredients
1 large onion (about ¾ lb) coarsely chopped
2 Garlic cloves smashed and peeled
2 tbs dried red peppers
1 can (35 ounces) Italian plum tomatoes coarsely chopped Reserve the juice
1 ½ tsp cumin
1 ½ tsp coriander
2 tsp chili powder or to taste
½ tsp oregano
½ tsp marjoram
¼ tsp cayenne pepper
½ tsp cinnamon
2 lbs chuck cut into ¼ inch cubes
1 ounce unsweetened chocolate chopped
2 tbs red wine vinegar
2-½ tsp salt
Sour Cream for serving (optional)
Grated cheddar cheese for serving (optional)
directions
Place all of the above ingredients except the beef in a 14”x11”x 2” microwave safe dish and cook uncovered for 9 minutes. Stir in the beef cover tightly with plastic wrap and cook for 15 minutes
If you are planning to reheat, do not sir in the coriander, chocolates, vinegar and salt until you reheat.

Substitute the ground beef for the cubed beef and cook for only 5 minutes instead of 15 minutes.
