RICE SALAD WITH CURRY MUSTARD VINEGARETTE

ingrediants

1 cup cooked rice

2 tomatoes

¼ cup onion

½ cup celery

¼ cup olives sliced

½ tsp curry

1 tsp Dijon mustard

2 tbs wine vinegar

7 tbs olive oil

Salt and pepper to taste

directions

Combine the first five ingredients in a bowl.  Whisk the curry, mustard, and vinegar until slightly thickened.  Add Olive Oil and mix completely.
