|Soils are sand and gravel over a clay and iron crasse de fer subsoil. Complete destemming before crushing, followed by the use of temperature controlled tanks for maceration, and thrice-daily pumpovers. Barrel aged for 15 months aging in 40% new French oak, with minimal egg white finning before bottling.
