A deep, richly dense, inky ruby color, a ripe ethereal nose, reminiscent of dried plums, a textured, mouth-filling taste and an elegant, lingering finish. Great body and concentration.

Wine maker notes
This Amarone is made from the classic red grapes of Valpolicella; namely, Corvina, Molinara and Rondinella. The "Il Bosco" vineyard is located in Negrar, the very heart of the Amarone and Valpolicella D.O.C. zones. This prized site is only 4 hectares (10 acres). Through a careful selection of fruit, Franco Cesari sets aside the very best grapes in the hope of producing about 10,000 bottles in outstanding vintages. The grapes are patiently dried until mid-January. Fermentation takes place slowly in stainless steel at low temperatures for 3 or 4 months. After the malolactic, the wine is transferred, under a blanket of Nitrogen, to large Slavonian casks where it rests for two years. This is followed by at least 18 months of bottle aging. The resulting wine is opulent and concentrated. Cesari Amarone "Il Bosco" will develop in the bottle for a decade or more.

Food pairing
Superb with game dishes or strong, elegant, flavorful cheeses such as parmigiano reggiano and grana padano, blue-veined stilton and gorgonzola. Try it with game or with nuts. This is an impressive wine which should be served last, due to its impressive size. A wine of contemplation. The port drinker will enjoy this Amarone.
