Cimarossa Vineyards (pronounced Chimarossa), is one of Howell Mountain’s more secluded estates and vineyard gems. The sixty acre ranch is owned by Dino Dina and Corry Dekker. Dino planted the slopes of Cimarossa with vines and olive trees in 1998. At 2,100 feet it is consistently above the fog layer with mild temperature excursions and a unique microclimate. The surrounding high ridges that enclose Bell Canyon protect the property from the prevailing winds creating favorable conditions for the vineyard. The Cimarossa Cabernet is produced from their Riva di Ponente vineyard – a hand-farmed, terraced, 1.4 acre site with full western exposure. With a total of 15 planted acres Cimarossa has additional fruit which they sell to several top producers including Ed Sbragia and Tor Kenward. The winemaking style is modern, utilizing cutting edge fermentation equipment.
