An entirely varietal wine fermented in concrete, stainless steel and oak tanks, this is complex, structured and supremely earthy, with mineral traces throughout. The 2017 Nuns Canyon is a classically styled Cabernet Sauvignon with great freshness and restraint without lacking any fruit. The nose has lush cassis cut through with notes of iron, dried herbs, flowers and bitter chocolate. The palate is full-bodied, its ripe fruit tempered by mineral streaks. It has finely detailed tannic structure and finishes with great freshness. 585 cases produced.
