|A blend of Village fruit harvested from east-facing vines planted on chalky clay soils, this wine may also contain Premier Cru fruit. The whole berries were cold macerated prior to fermentation with indigenous yeasts. The cap was punched down by hand and the wine naturally settled in vat for 17 days before aging in barrel (15% new).
