Flavors associated with Sauvignon Blanc are citric, herb, fig, melon, pear, pineapple, grass or hay. They all have some of these flavor characteristics, depending on soil, climate and location (the "French call this "terroir"), but none have them all.

Best of all, they are for the most part inexpensive, ideal for the foods of spring,such as flat fish, grilled bell peppers, tomatoes, and other pungent foods that would overpower other white wines.
