The vineyards are located on the fine broad hillside in the southern part of the Cotes de Beaune that rises 700 to 1000 feet. It shares that hill and the title of prince of the world's dry white wines with its neighbor, Puligny. The wines of Chassagne Montrachet tend to be rich, rounded and opulent on the front end with a finish of crisp acidity. As they age they become richer, rounder and softer, but with a profound minerality. This makes them an ideal match for veal, pork and poultry especiailly when prepared with riches sauces. They are also an excellent accompaniment to fatty fish such as salmon and swordfish, as well as lobster, crab or shrimp.
